Basil, Pepper and Corn Quinoa Salad

Vibrant History of Quinoa
Quinoa originates from the spinach family and it is derived from the seed of the quinoa plant. The pinhead-size seeds can be white, red, or black. The history of quinoa is clearly rooted from South America and dates back to many centuries ago, when the Ancient Inca Empire discovered that quinoa was suitable for human consumption. From its inception, quinoa has grown in popularity across the world and is now known as the nutritional superstar of the decade!
1 ½ cup mixed quinoa
1 teaspoon salt
2 cups fresh or frozen corn
1 cup tightly packed basil leaves, finely chopped
½ cup roasted red peppers
½ cup diced red onions
2 tablespoon olive oil
3 to 5 tablespoons fresh lemon juice (1 or 2 lemons)
Step 1- Rinse quinoa thoroughly in cool water and drain
Step 2- In a medium saucepan combine quinoa, salt and 3 cups water. Bring to boil over high heat. Cover, reduce heat to low and simmer for 5 minutes. Then add the corn, cover and cook until water is absorbed.
Step 3- Let cool, then transfer mixture to large serving bowl. Toss well with a fork, fluffing the quinoa.
Step 4- Add basil, peppers and onion
Step 5- Stir in oil and add enough lemon juice to give salad a distinct lemony edge. Adjust seasons to taste.
